I started in the hospitality sector because my brother died about 37yrs ago and because he was a chef I felt he had not achieved what he wanted so I thought I would continue his dream. Anyway I’m about to open a small place in West Ealing which I had previously about 10yrs ago. This time I said I would try high end Caribbean take away delivery. It has about 12 seats very small but as you see what’s going on I decided to put the mini restaurant to one side. Worked for Fortnum mason, Royal Academy Golf Club, Westbury Mayfair hotel and a few hours. Last 10yrs I decided to study Caribbean food. What I’ve noticed is we aim to cheap and there is no food or cost control. It needs to remarked over again but properly this time.
